Eat Simply So That Others May Simply Eat!
If you convinced yourself to visit this page, I congratulate you! At the same time, you may be asking yourself the question above. I certainly did. That's why I feel compelled to offer this information for your consideration.
There is a growing consciousness revolving around the food we eat. Eating is such a basic part of life and a part which we can ultimately control. Through simple, personal acts we can help to effect change.
The face of the vegetarian or vegan looks increasingly like you and me.
But what does veganism have to do with going green?
A LOT! Here is the definition of veganism from VeganAction.com:
What is a VEGAN?
- A vegan (pronounced VEE-gun) is someone who, for various reasons, chooses to avoid using or consuming animal products. While vegetarians choose not to use flesh foods, vegans also avoid dairy and eggs, as well as fur, leather, wool, down, and cosmetics or chemical products tested on animals.
Why VEGAN?
- Veganism, the natural extension of vegetarianism, is an integral component of a cruelty-free lifestyle. Living vegan provides numerous benefits to animals' lives, to the environment, and to our own health–through a healthy diet and lifestyle.

The Environment –
Animal agriculture takes a devastating toll on the earth.
It is an inefficient way of producing food, since feed for farm animals requires land, water, fertilizer, and other resources that could otherwise have been used directly for producing human food.
850 million people go hungry every year – most of these are children. We have the land and resources to feed every person well. The inefficiency of raising animals for food and other uses robs us of these resources.
The Result -
Animal agriculture's dependence on higher yields accelerates topsoil erosion on our farmlands, rendering land less productive for crop cultivation, and forcing the conversion of wilderness to grazing and farm lands.
Animal waste from massive feedlots and factory farms is a leading cause of pollution in our groundwater and rivers.
The United Nations Food and Agriculture Organization has linked animal agriculture to a number of other environmental problems, including:
- contamination of aquatic ecosystems, contamination of soil, and drinking water by manure, pesticides, and fertilizers
- acid rain from ammonia emissions
- greenhouse gas production;
- and depletion of aquifers for irrigation.

Take a look at this article on the TIME MAGAZINE website. The article is titled "Eat Your Greens" by Bryan Walsh and looks at the fact that foods with a low carbon cost tend to be healthier for us.

In a time when population pressures have become an increasing stress on the environment, there are additional arguments for a vegan diet.
The United Nations has reported that a vegan diet can feed many more people than an animal-based diet.
For instance, projections have estimated that the 1992 food supply could have fed about
- 6.3 billion people on a purely vegetarian diet,
- 4.2 billion people on a 85% vegetarian diet,
- or 3.2 billion people on a 75% vegetarian diet
As you can see, this is definitely a topic for discussion in this day and age. Healthy-kids-go-green will be offering more information and resources for considering a vegetarian or vegan lifestyle.
